Here’s what I can tell you from experience:
You can indeed grill on a Traeger. However, your food isn’t directly exposed to the heat source, unlike traditional charcoal or gas grills. Instead, it’s shielded from the burning fuel by a heat baffle (or heat deflector) and a drip tray. As a result, Traegers grill more effectively when the lid is closed. This allows the heat to radiate inside the cooking chamber, similar to how ovens cook.
